Ingredients

  • 1 teaspoon olive oil
  • 1/4 cup onion, chopped
  • 1 cup long-grain rice
  • 1 cup orange juice
  • 1 cup chicken broth
  • 1 tablespoon orange zest
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt

Instructions

  1. Heat oil in a medium skillet, or saucepan, over medium heat. Add onion; cook until tender, about 5 minutes. Add rice and cook 2 minutes, stirring constantly.
  2. Add orange juice and chicken broth. Bring to a boil over medium-high heat, cover and reduce heat; simmer for 20-25 minutes or until rice is tender and liquid is absorbed.
