These chicken and black bean burritos are fast and easy, using a rotisserie chicken and refrigerated salsa.


  • 1/4 cup water
  • 2 tablespoons lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 2 cups shredded chicken breast
  • 1/4 cup green onions (thinly sliced)
  • 3/4 cups black beans (drained and rinsed)
  • 1/2 cup salsa
  • 6 8-inch flour or wheat tortillas
  • 1/2 cup cheese (grated)


1. Combine water, lime juice, chili powder, ground cumin, and black pepper in a medium saucepan and bring to a boil. Add chicken and green onions.
2. Combine black beans and salsa.
3. Divide chicken mixture and bean mixture evenly onto the tortillas and sprinkle with grated cheese. Roll, folding both ends in.
4. Heat a large skillet or griddle to medium-high heat. Spray with cooking spray and cook burritos 3 or 4 minutes on each side, or until golden brown.
