Coconut Pecan Topping

Ingredients

  • 1/4 cup milk
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup butter
  • 1/2 cup pecans (chopped)
  • 3/4 cups flaked coconut (divided)

Directions

1. Prepare topping by combining butter, milk, brown sugar, and vanilla in a medium saucepan. Bring to a boil and boil for 3 or 4 minutes, stirring constantly. Add pecans and 1/2 cup of the coconut.
2. Spread over warm cake and top with the remaining 1/4 cup coconut. Broil until bubbly and brown, about 4 or 5 minutes. Watch the cake closely so as not to burn it.
