These are delicious mini meat loaves that cook very quickly.

Ingredients

  • 1/2 cup onion (chopped)
  • 2 cloves garlic (finely chopped)
  • Cooking spray
  • 1/2 cup breadcrumbs
  • 3oz cheese, any variety (diced)
  • 2 tablespoons Parmesan cheese (grated)
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2lb lean ground beef
  • 1 egg (lightly beaten)
  • 1/2 cup kethcup (divided)

Directions

1. Preheat oven to 425°
2. Heat a medium skillet over medium high-heat, spray with cooking spray. Saute onion and garlic until the onion becomes translucent, about 5 minutes.
3. Combine onion mixture with breadcrumbs, cheeses, Dijon mustard, salt, pepper, ground beef, egg, and 1/4 cup of the ketchup.
4. Shape mixture into 6 miniature loaves, 4" X 2".
5. Bake for 25 minutes or until done.
