This is a great meatless spinach manicotti dish.


  • 12 manicotti shells
  • 2 cups part-skim mozzarella cheese (divided)
  • 15oz part-skim ricotta cheese
  • 10oz frozen spinach (thawed and squeezed dry)
  • 1/4 cup Parmesan cheese
  • 1 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jar pasta sauce (24 ounces)
  • Cooking Spray


1. Preheat oven to 375°.
2. Cook manicotti shells for two minutes less than package directions, drain and let cool slightly so they are not too hot to handle.
3. Combine 1 1/2 cups mozzarella, spinach, Parmesan cheese, oregano, salt, and pepper in a medium bowl.
4. Spray a 13" X 9" casserole dish with cooking spray and put enough sauce in the bottom so that it covers the surface.
5. Carefully spoon cheese mixture into manicotti shells, place in casserole dish in a single layer.
6. Top with remaining sauce.
7. Cover tightly with foil and bake for 30 minutes.
8. Remove foil, top with the remaining mozzarella cheese and bake until the cheese melts, about 5 minutes. Let stand for 10 minutes.
