How to make Skinny Bean & Cheese Quesadillas:

Thaw one package of tortillas on the counter for about 5 minutes, or until they come apart easily.

Lay four tortillas out.

Warm one cup of refried beans in the microwave for about 30 – 60 seconds. Divide the beans between four tortillas, spreading in a thin layer. Top each of the four tortillas with one fourth cup of the cheese. Top each tortilla with another tortilla.

Spray a non-stick skillet with cooking spray and cook each quesadilla over medium to medium-high heat until the cheese is melted and the tortilla begins to brown, about 3 – 4 minutes on each side.
- Serve with salsa, sour cream and guacamole.

- 1 cup shredded cheese
