    We are still making an effort to eat better, especially since there seems to be poor choices available every time we turn around.

    For me, that is the hardest thing about the holidays. I have been cooking, and taking foods that are healthier.

    One of the biggest ways we change how we eat is to swap foods out for foods that are better for us. We look for alternatives that are lower in calories, carbs and especially fat.

    Skinny Bean & Cheese Quesadillas feature refried beans and cheese. They are made with a low fat CAULIPOWER cauliflower tortilla, making them good for you!

    How to make Skinny Bean & Cheese Quesadillas:

    • Thaw one package of tortillas on the counter for about 5 minutes, or until they come apart easily.
    • Lay four tortillas out.
    • Warm one cup of refried beans in the microwave for about 30 – 60 seconds. Divide the beans between four tortillas, spreading in a thin layer. Top each of the four tortillas with one fourth cup of the cheese. Top each tortilla with another tortilla.
    • Spray a non-stick skillet with cooking spray and cook each quesadilla over medium to medium-high heat until the cheese is melted and the tortilla begins to brown, about 3 – 4 minutes on each side.
    • Serve with salsa, sour cream and guacamole.

    Ingredients
      

    • 1 cup refried beans
    • 1 cup shredded cheese
    • 8 CAULIPOWER cauliflower tortillas
    • Serve with salsa, sour cream and guacamole if desired
