Kodiak Cakes Muffins

Kodiak Cakes Protein Muffins are a great grab-and-go breakfast or snack. We use sweetened applesauce instead of banana so we can have everything on hand to make these any time we want.

Ingredients

  • 2 cups Kodiak Cakes Buttermilk Power Cakes Waffle and Flapjack Mix
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 cup milk
  • 1 egg
  • 1 cup sweetened applesauce
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla
  • 1/2 cup mini chocolate chips
  • 2 tablespoons mini chocolate chips

Instructions

  • Preheat oven to 350°. Spray muffin pan liberally with nonstick cooking spray.
  • Combine the pancake mix, cinnamon and baking powder in a medium bowl.

  • Beat the egg slightly in a small bowl. Whisk the milk, beaten egg, maple syrup, applesauce and vanilla in large mixing bowl. Add the dry ingredients to wet ingredients and mix until just combined. Do not over-mix, muffin batter will be lumpy. Fold in chocolate chips.

  • Divide batter between twelve muffin cups, they will be almost full. Top with reserved chocolate chips, if desired. Bake for 18 – 20 minutes or until the edges begin to brown and the top springs back when touched.

  • Cool 4 – 5 minutes in the pan and then move to a wire rack to cool. Run a knife between the muffin and muffin cup to loosen the muffin.
