For the cake:
- 2 cup flour
- 1 1/2 cup sugar
- 2/3 cup cocoa
- 1 tsp baking soda
- 1/2 tsp salt
- 3 cup zucchini, shredded
- 3 eggs
- 1/2 cup canola or vegetable oil
- 1/2 cup unsweetened applesauce
For the frosting:
- 2 cup powdered sugar, sifted
- 1 stick butter, softened
- 1 tsp vanilla
- 1-2 tablespoons milk
Preheat oven to 350°. Grease and lightly flour 10" X 15" X 1" jelly roll pan.
In a large bowl mix the ingredients for the cake until combined. Pour into jelly roll pan. Bake for 23-25 minutes or until toothpick inserted into the center comes out clean. Cool completely.
Beat the butter, powdered sugar, and vanilla with an electric mixer in a large bowl until smooth. Beat in enough milk to make the frosting a spreadable consistency. Spread evenly, in a thin layer, over cooled cake.
