- 1 1/2 pounds red potatoes, about 5 medium
- 2 teaspoons olive oil
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Preheat oven to 425°.
Wash potatoes and cut into cubes, about 1".
Place in a single layer on a sheet pan and drizzle with olive oil. Season with Italian seasoning, salt and pepper, toss to coat.
Roast in the oven until golden brown, about 30 minutes.
