Sweet Potatoes with Marshmallows feature canned sweet potatoes, butter, brown sugar, and mini marshmallows. A traditional Thanksgiving side dish.

Ingredients

  • 2 cans sweet potatoes 40 ounces
  • 1/4 cup butter 1/2 stick
  • 1/8 cup brown sugar
  • 4 cups miniature marshmallows

Instructions

  • Preheat oven to 350°. Spray a 9" X 13" casserole dish with cooking spray.
  • Drain sweet potatoes and cut large chunks into bite-sized pieces.
  • Cut butter into small chunks and scatter on top of sweet potatoes. Sprinkle with brown sugar. Bake 25 - 30 minutes or until hot.
  • Cover with miniature marshmallows and bake until marshmallows melt and begin to brown, about 5 - 7 minutes. See note below.

Notes

Watch closely while browning the marshmallows, if they are in too long they will melt. (Yes, I have done it before, haha!) If you are making something in the oven that requires a different temperature you can easily bake these at that temperature. Just adjust the time accordingly. If the temperature is lower they will need to cook longer and if the temperature is higher they will need to cook less time. Just watch those marshmallows!
