Ingredients

  • 4 medium Russet potatoes about 2 pounds
  • 1/4 cup onion
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder

Instructions

  • Scrub potatoes and pat dry. Chop into 1/2 inch pieces. Chop onion.

  • Heat oil in a large non-stick skillet over medium heat. Add potatoes, onions, salt, pepper, and garlic powder; stir. Cook for 5 minutes, reduce heat to medium-low. Cover and cook, stirring occasionally, for 25-30 minutes or until potatoes are tender.
    2 teaspoons olive oil, 1/2 teaspoon salt, 1/4 teaspoon pepper, 1/2 teaspoon garlic powder

Notes

For crispy potatoes  - after they are fork tender raise to medium high heat and cook with the lid off until the desired crispiness.
