Ingredients

  • 1 tablespoon olive oil
  • 2 medium red potatoes, cut into bite-sized pieces
  • 1 sweet potato, cut into bite-sized pieces
  • 1/4 cup onion, chopped
  • 1/2 tablespoon chopped fresh sage
  • 1 clove garlic
  • 1 medium beet, cooked
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Heat the olive oil in a nonstick skillet over medium heat. Add the potatoes, sweet potatoes, onion, sage and garlic and cook for 25 minutes, stirring occasionally.
  • Add the beets, salt and pepper; cook for an additional 10 minutes or until the beets are heated through, stirring occasionally.
