- 1 tablespoon olive oil
- 2 medium red potatoes, cut into bite-sized pieces
- 1 sweet potato, cut into bite-sized pieces
- 1/4 cup onion, chopped
- 1/2 tablespoon chopped fresh sage
- 1 clove garlic
- 1 medium beet, cooked
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Heat the olive oil in a nonstick skillet over medium heat. Add the potatoes, sweet potatoes, onion, sage and garlic and cook for 25 minutes, stirring occasionally.
Add the beets, salt and pepper; cook for an additional 10 minutes or until the beets are heated through, stirring occasionally.
