- 1 pound fresh green beans trimmed
- 1 tablespoon olive oil
- 1 tablespoon minced garlic
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 lemon thinly sliced and cut in half
Place green beans in a skillet and cover with water. Bring to a boil over medium-high heat. Boil for 6 minutes.
Drain and return to the skillet over medium heat. Add olive oil, garlic, salt, and pepper and cook for 1 minute. Add sliced lemons and cook for an additional 1-2 minutes. Serve warm or at room temperature.
I cut my green beans so they are bite-sized. You can leave them long if you like and it won't change the cooking time. The lemon I used yielded about 7 slices, then I cut the slices in half. This recipe is very garlicky, you can cut the amount down to a couple of teaspoons if desired. I used the minced garlic that comes in a jar, without the liquid.
