- Cooking spray
- 1 package tater tots 32 ounces
- 12 eggs
- 1 cup milk
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 2 cups shredded cheese Mexican blend or your favorite
- sour cream
- salsa
- cilantro chopped
Preheat oven to 375°. Spray a 9" X 13" casserole dish (3 quarts) with nonstick cooking spray.
Arrange tater tots in dish, or you can just pour them in!
In a large bowl whisk eggs, milk, cumin, chili powder, pepper and garlic powder together until well blended. Pour over tater tots.
Bake 35 - 40 minutes until a knife inserted into the center comes out clean. Sprinkle cheese over egg mixture, return to the oven and melt the cheese, 3 - 5 minutes. Let stand 10 minutes.
Top with salsa, sour cream and chopped cilantro.
