- 1 cup flour
- 2 tablespoons brown sugar firmly packed
- 1 teaspoon baking powder
- 1 1/2 teaspoons cinnamon
- 1 cup milk
- 1 egg
- 1 tablespoon butter melted
- 1 teaspoon vanilla
- 1 cup shredded apples about 1 1/2 small
In a medium bowl whisk together flour, brown sugar, baking powder and cinnamon.
In a small bowl whisk together milk, egg, butter, and vanilla. Add to dry mixture and mix until just combined. Mix in apples.
Coat griddle or nonstick skillet with cooking spray or butter. Pour about a 1/4 cup batter onto griddle and cook until the edges are dry, flip and cook until browned, about 2-4 minutes per side.
