Ingredients

  • 1 cup flour
  • 2 tablespoons brown sugar firmly packed
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons cinnamon
  • 1 cup milk
  • 1 egg
  • 1 tablespoon butter melted
  • 1 teaspoon vanilla
  • 1 cup shredded apples about 1 1/2 small

Instructions

  • In a medium bowl whisk together flour, brown sugar, baking powder and cinnamon.
  • In a small bowl whisk together milk, egg, butter, and vanilla. Add to dry mixture and mix until just combined. Mix in apples.
  • Coat griddle or nonstick skillet with cooking spray or butter. Pour about a 1/4 cup batter onto griddle and cook until the edges are dry, flip and cook until browned, about 2-4 minutes per side.
