- 1 whole whole chicken 4-5 pounds
- 3 sprigs fresh sage, rosemary, or thyme
- 2 tablespoons chopped fresh sage, rosemary, or thyme
- 3 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Preheat oven to 400°.
Discard neck and giblets. Trim off excess fat. Loosen skin from breast by gently running fingers between breast and skin.
Insert fresh sage, rosemary, or thyme under loosened skin over breast. Mix chopped herb, lemon juice, zest, olive oil, garlic, salt , and pepper in a small bowl. Brush over cavity and outside of chicken.
Place chicken on rack in roasting pan. Roast, uncovered, for 1 hour 20 to 1 hour 40 minutes, or until meat thermometer reads 180° when inserted into thickest part of thigh. Let rest 15 minutes before serving.
