Ingredients

  • 1 whole whole chicken 4-5 pounds
  • 3 sprigs fresh sage, rosemary, or thyme
  • 2 tablespoons chopped fresh sage, rosemary, or thyme
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Preheat oven to 400°.
  • Discard neck and giblets. Trim off excess fat. Loosen skin from breast by gently running fingers between breast and skin.
  • Insert fresh sage, rosemary, or thyme under loosened skin over breast. Mix chopped herb, lemon juice, zest, olive oil, garlic, salt , and pepper in a small bowl. Brush over cavity and outside of chicken.
  • Place chicken on rack in roasting pan. Roast, uncovered, for 1 hour 20 to 1 hour 40 minutes, or until meat thermometer reads 180° when inserted into thickest part of thigh. Let rest 15 minutes before serving.
