Ingredients

  • 3 cups prepared mashed potatoes
  • 3 strips thick cut bacon cooked, crumbled and divided
  • 1 1/2 cups cheese divided
  • 1 egg lightly beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Preheat oven to 350°. Spray 12 muffin cups with nonstick cooking spray.
  • In a medium bowl mix mashed potatoes, 2 strips of crumbled bacon, 1 cup cheese, egg, salt and pepper. Divide between cups and lightly press down with the back of a spoon.
  • Bake for 30-35 minutes or until hot. Top with remaining strip of crumbled bacon and 1/2 cup of cheese, return to the oven until cheese is melted, about 2-3 minutes. Let stand 5 minutes.
  • Run a butter knife around edges and remove from muffin cups.

Notes

If using cold mashed potatoes heat in the microwave until slightly warm. I used cheddar cheese, but any kind of cheese would be good.
