Ingredients

  • 1 pound cod fillets
  • 1/2 cup flour
  • 2 beaten eggs
  • 2 cups Honey Bunches of Oats® with Almonds
  • Cooking spray

Instructions

  • Preheat oven to 400°. Place a wire cooling rack inside a rimmed sheet pan and spray with cooking spray.
  • Cut fish into strips. Pat dry with paper towels to remove excess moisture.
  • Place Honey Bunches of Oats® with Almonds in a zip top bag and crush with meat mallet or rolling pin.
  • Place flour, egg, and Honey bunches of Oats® with Almonds in separate shallow dishes. Dip fish sticks in flour, then egg, then cereal. Place on wire rack. Spray liberally with cooking spray, turn and spray other side liberally as well.
  • Bake for 13-15 minutes or until fish is cooked through and flakes easily with a fork.
  • Serve with dipping sauce, of desired.

Notes

If you are using fish that is still frozen cut it into strips and then microwave it on defrost in 30 second intervals. Pat each fish stick with paper towels to get some of the excess water out.
