Mini Meat Loaf

Mini Meat Loaf are made with lean ground beef and have chunks of cheese in them!

Ingredients

  • 1/2 cup onion chopped
  • 2 cloves garlic finely chopped
  • Cooking spray
  • 1/2 cup breadcrumbs
  • 3 ounces cheese any variety (diced)
  • 2 tablespoons Parmesan cheese grated
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 lb lean ground beef
  • 1 egg lightly beaten
  • 1/2 cup ketchup divided

Instructions

  • Preheat oven to 425°
  • Heat a medium skillet over medium high-heat, spray with cooking spray. Saute onion and garlic until the onion becomes translucent, about 5 minutes.
  • Combine onion mixture with breadcrumbs, cheeses, Dijon mustard, salt, pepper, ground beef, egg, and 1/4 cup of the ketchup.
  • Shape mixture into 6 miniature loaves, 4" X 2".
  • Bake for 25 minutes or cooked through.
