Ingredients

  • 1 cup sugar
  • 1/2 cup unsweetened applesauce
  • 3 eggs
  • 2 cups milk
  • 2 teaspoons vanilla
  • 3 cups quick cooking oats
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 3/4 cup dried cranberries

Instructions

  • Preheat oven to 375°. Coat a 13" X 9" baking dish with cooking spray.
  • Combine sugar and applesauce in a large bowl and whisk until well combined. Whisk in eggs, milk and vanilla. Add oats, flour, baking powder and salt and mix until combined. Mix in white chocolate chips and dried cranberries. Pour the oat mixture into an even layer in the prepared pan.
  • Bake 35 - 40 minutes or until edges become golden brown and start to pull away from the sides of the pan.
  • Allow to cool before cutting into 24 bars.
