Vegetarian Cracker Barrel Hashbrown Casserole

Ingredients

  • 1 can cream of potato soup 10.5 ounces
  • 1 cup sour cream
  • 2 tablespoons melted butter
  • 1/2 cup onions
  • 1/4 teaspoon pepper
  • 2 cups shredded cheese divided
  • 1 package frozen hash browns 32 ounces

Instructions

  • Preheat oven to 350°. Spray a 9″ X 13″ baking dish with cooking spray.
  • In a large bowl combine the melted butter, soup, sour cream, onions, black pepper and 1 1/2 cups of cheese. Fold in the hash brown potatoes. Pour into prepared casserole dish and sprinkle the remaining cheese on top.
  • Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15 – 20 minutes or until hot and bubbly and the edges just begin to brown.
  • Let set for about 5 minutes before serving.
