Easy Mexican Black Beans

Ingredients

  • 1 teaspoon olive oil
  • 1 jalapeño pepper chopped with ribs and seeds removed
  • 1/4 cup onion chopped
  • 2 cans black beans 14.5 ounces each
  • 1/8 teaspoon cumin
  • 1 1/4 cups chicken broth low sodium
  • Lime juice

Instructions

  • Dice jalapeño and onion.
  • Rinse and drain black beans.
  • Heat olive oil in a small to medium saucepan over medium-high heat, add chopped onion and jalapeño and sauté until softened, 2-3 minutes.
  • Add chicken broth and add cumin, cook about 5 minutes or until heated through.
