Ingredients

  • 1 pound penne pasta
  • 3 tablespoons butter divided
  • 1 pound boneless skinless chicken breast
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound mushrooms
  • 1 red onion
  • 2 teaspoons garlic
  • 1 cup chicken broth
  • 3/4 cup grape juice
  • 1/4 cup balsamic vinegar
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1/2 cup Parmesan cheese + additional for garnish

Instructions

  • Cut chicken into bite-sized pieces, slice the mushrooms and chop the onion. 
  • Cook pasta al dente according to the package directions, usually about 9 minutes. 
  • Season chicken with salt and pepper. Melt a tablespoon of butter over medium heat in a large skillet. Add chicken and cook until browned, about 5 minutes, transfer to a dish. 
  • Add a tablespoon of butter to the skillet. Sauté mushrooms and onions until softened, about 5-7 minutes, add garlic and cook for 1 minute. Raise to medium-high heat and add chicken broth, grape juice, and balsamic vinegar scraping up any brown bits off the bottom of the pan. Continue to cook over medium to medium-low heat until the liquid reduces by about half, approximately 10 minutes.
  • Reduce heat to low; add sour cream, heavy cream, Parmesan cheese, and remaining tablespoon of butter. Add chicken and pasta and heat through.
  • Top each serving with additional Parmesan cheese, if desired. 

Notes

The sauce is thin and will thicken a bit as it stands. Unless we get interrupted during dinner ours never lasts that long.
