- 2 eggs
- 1/2 tbsp butter
- salt to taste
- pepper to taste
- 1/4 cup shredded cheese
Beat eggs in a small bowl until light and fluffy.

Heat butter in a nonstick skillet over medium heat, add beaten eggs to the melted butter. The eggs will begin to cook immediately. After about 30 seconds, using a silicone spatula, start pulling the eggs toward the center of the pan.

Sprinkle with salt and pepper and continue to move the egg mixture around, for about 2 minutes.

When the eggs are still soft add the cheese to the top of the eggs and stir them around until the cheese melts, about 30 seconds.
1/4 cup shredded cheese
- This recipe is more of a guideline, I don't actually measure the butter I just use about one-half tablespoon of butter per 2 eggs.
- Use a nonstick skillet that is the appropriate size (a stainless steel pan will work if you don't have a non-stick pan). A small skillet is the perfect size for for one serving of two eggs.
- A silicone spatula is heat proof making it a better choice than a rubber spatula that might melt.
- Cook the eggs to your desired doneness, some people prefer a soft scramble and other prefer a hard scramble.
