- 2/3 cup oats, old-fashioned or quick cooking
- 1/2 cup whole wheat flour
- 1/2 cup flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1 egg
- 1 1/2 tbsp canola oil
- 1/8 cup walnuts, chopped
- banana slices
- cooking spray
In a large bowl mix the oats, wheat flour, flour, sugar, baking powder, and salt. Mix in milk, egg, oil, and walnuts.
While the pancake batter rests, heat a griddle pan or nonstick skillet over medium-high heat until a drop of water "skittles" across it and evaporates. (I heat my electric griddle pan to 350°.)
Spray griddle or nonstick skillet with cooking spray. Pour about a 1/2 cup of batter onto griddle and place sliced bananas on top of each pancake; cook until the tops are covered with bubbles and the edges are dry, flip and cook until browned, about 3-4 minutes per side.
