Ingredients

  • cup oats, old-fashioned or quick cooking
  • ½ cup whole wheat flour
  • ½ cup flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • 1 egg
  • 1 ½ tablespoons canola oil
  • cup chopped walnuts
  • banana slices
  • cooking spray

Instructions

  • In a large bowl mix the oats, wheat flour, flour, sugar, baking powder, and salt. Mix in milk, egg, oil, and walnuts.
  • While the pancake batter rests, heat a griddle pan or nonstick skillet over medium-high heat until a drop of water "skittles" across it and evaporates. (I heat my electric griddle pan to 350°.)
  • Spray griddle or nonstick skillet with cooking spray. Pour about a ½ cup of batter onto griddle and place sliced bananas on top of each pancake; cook until the tops are covered with bubbles and the edges are dry, flip and cook until browned, about 3-4 minutes per side.
