These Blended Baked Oats Without Banana are soft, fluffy, and naturally sweetened with applesauce and maple syrup. Made in the blender, they're perfect for an easy meal prep breakfast.
Preheat the oven to 350° and spray an 8" square baking pan liberally with nonstick cooking spray.
Place all the ingredients, except the mix-ins, into a blender. Blend on high until the mixture is smooth.
Add the chocolate chips and stir to combine.
Pour into the prepared baking dish and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Pro Tip: Stir in the chocolate chips last, pour the batter into the baking dish, and bake immediately. If the batter sits too long, the chocolate chips will sink to the bottom.To make White Chocolate Cranberry Oats - omit the cocoa powder and add ¾ cup white chocolate chips and ½ cup dried cranberries. If you're using a toothpick to check for doneness, be sure to insert it in a spot without chocolate chips for an accurate result.If you want your baked oats to look just like mine, reserve a couple of tablespoons of the chocolate chips (and cranberries, if you're making that version) and sprinkle them on top right before baking.
