Cheesy Beef and Potato Burritos

These Cheesy Beef and Potato Burritos are crispy, cheesy, and packed with seasoned ground beef, tender potatoes, nacho cheese sauce, and taco sauce wrapped in golden brown tortillas. Using canned potatoes keeps this easy dinner recipe ready in about 20 minutes, making it perfect for busy weeknights, hungry families, game day, or feeding a crowd on a budget.

Ingredients

  • 1 pound ground beef
  • 1 can diced potatoes 15 ounces
  • 1 packet taco seasoning
  • ½ cup water
  • 8 burrito-size flour tortillas
  • 1 cup nacho cheese sauce
  • ½ cup taco sauce
  • nonstick cooking spray

Instructions

  • Brown the ground beef in a skillet over medium-high heat (drain excess grease if necessary), then stir in the potatoes.

  • Add the taco seasoning and water and simmer for about 5 minutes, stirring occasionally.

  • Spread a couple tablespoons of cheese sauce and taco sauce onto 4 tortillas, then divide the meat mixture evenly between them. Top with a little more cheese sauce and taco sauce.

  • Roll the burritos as tightly as possible, then brown them in a large skillet or on a griddle sprayed with nonstick cooking spray over medium heat, turning as needed until golden brown on all sides.

Notes

The amount of nacho cheese sauce and taco sauce are estimates, I don't measure them.
