Ingredients

  • 1 pie crust 9-inch
  • 1 tablespoon butter
  • 1 cup diced potato
  • 1 cup diced ham
  • ¼ cup onion chopped
  • 6 eggs
  • ¾ cup heavy cream
  • ¼ teaspoon black pepper
  • teaspoon salt
  • 1 cup grated cheddar cheese

Instructions

  • Preheat oven to 450°.
  • Unroll the pie crust and place it in a pie pan, press dough gently into the corners of the pie dish with your fingers, pierce all over with a fork.
    1 pie crust
  • Bake for 7-9 minutes or until it begins to brown slightly, set aside.
  • Lower the oven temperature to 350°.
  • While the crust bakes melt the butter in a non-stick skillet over medium heat. Cook potatoes, ham, and onion until they start to turn light golden brown on the edges, stirring often, 6-9 minutes. Let cool about 3-5 minutes.
1 tablespoon butter, 1 cup diced potato, 1 cup diced ham, ¼ cup onion
  • In a large bowl whisk eggs and heavy cream. Add salt and pepper and whisk until well combined. Stir in ham mixture, making sure ham and potato mixture is as even as possible in the egg mixture.
6 eggs, ¾ cup heavy cream, ¼ teaspoon black pepper, ⅛ teaspoon salt
  • Top with cheese and bake for 40-45 minutes.
    1 cup grated cheddar cheese

Notes

You can mix the cheese into the egg mixture or sprinkle it on top like I do.
Your quiche is done when the edges are set, and the center jiggles slightly. To be sure, insert a sharp knife into the center of the quiche—if it comes out clean, it’s ready!
Bake the quiche as close to the center of the oven as possible for even cooking.
I use Great Value pie crust, and it shrinks a little, this is perfectly fine!
