Chop the chicken, bell pepper and garlic.
Add the chicken broth, soy sauce, vinegar, garlic, ginger, and red pepper flakes to a small bowl or measuring cup and whisk to combine.

Heat the oil in a large nonstick skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until lightly browned, 2–3 minutes.

Stir in the bell pepper and edamame and cook until the pepper begins to soften, 1-2 minutes.

Stir in the shredded cabbage and cook, stirring occasionally, until just tender, 4–5 minutes.

Whisk the cornstarch into the prepared sauce, then pour it into the skillet. Cook, stirring constantly, until thickened, 2–3 minutes.

Serve immediately over cooked rice or noodles and garnish with green onions and sesame seeds, if desired.
