Cornflake Chicken Recipe

Juicy on the inside and perfectly crunchy on the outside, these Crispy Baked Cornflake Chicken Strips are a quick and easy dinner everyone loves. They bake up golden and crispy in about 15 minutes using just four main ingredients plus a few simple spices. It’s an easy weeknight recipe that both kids and adults will happily devour.

Ingredients

  • 12 chicken tenderloins about 2 pounds
  • 1 cup corn flakes
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon salt
  • teaspoon black pepper
  • 2 eggs
  • ¼ cup milk

Instructions

  • Preheat and prepare baking sheet: Preheat the oven to 425°F. Line a large rimmed baking sheet with parchment paper and spray the parchment with nonstick cooking spray.

  • Prepare the cornflake coating: Crush the cornflakes in a zip-top bag, transfer to a shallow bowl and mix in the spices.
    1 cup corn flakes, ¼ teaspoon garlic powder, ¼ teaspoon onion powder, ¼ teaspoon smoked paprika, ¼ teaspoon salt, ⅛ teaspoon black pepper
  • Mix the egg wash: In a shallow dish, whisk together the eggs and milk until combined.

  • Prep the chicken: Remove the cartilage and any clear membrane from each chicken tender .

  • Coat the chicken: Dip each chicken tender into the egg mixture, then press into the cornflake mixture, coating evenly. Place coated tenders on the prepared baking sheet, and spray the side facing up with more cooking spray.
  • Bake until golden: Bake in the preheated oven for 14–16 minutes, or until chicken is cooked through and the coating is crispy.

Notes

There are plenty of videos on YouTube and TikTok showing how to remove the tendon—just search for it. I usually use a knife and follow a method like this video suggests
Some of the tenderloins also have a thin, clear membrane, which I trim off with a sharp knife.
