Cowgirl Cookies

Cowgirl Cookies are a fun twist on classic cowboy cookies! These soft cookies are loaded with oats, coconut, macadamia nuts, white chocolate chips, and dried cranberries for a delicious cookie that's easy to make and perfect for sharing.

Ingredients

  • 1 cup butter
  • ¾ cup sugar
  • ¾ cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 cups quick oats
  • 1 cup white chocolate chips
  • 1 cup sweetened coconut
  • ¾ cup dried cranberries
  • ¾ cup macadamia nuts

Instructions

  • Preheat the oven to 350°F and line rimmed baking sheets with parchment paper or spray them with nonstick cooking spray.
  • In a large bowl beat the butter, sugar, and brown sugar until smooth and creamy using an electric mixer.

  • Add the flour, baking soda, baking powder, and salt and mix until just combined.

  • Stir in the oats, white chocolate chips, coconut, dried cranberries, and macadamia nuts.

  • Drop by rounded teaspoons at least 2" apart onto prepared baking sheet.
  • Bake for 10-12 minutes or until set and the edges start to turn light golden brown.

Notes

I use a cookie scoop that holds about 1 tablespoon of dough and get approximately 63 cookies.
If you don't have an electric mixer, you can make these cookies completely by hand.
Don't put cookie dough on a warm baking sheet. Let the pan cool before starting another batch.
bake my cookies on the middle rack. If only one baking sheet fits on the rack at a time, I bake one tray at a time.
Total time includes mixing the dough and baking one tray.
The cookies are done when they're set and the edges are just beginning to turn light golden brown.
