Ingredients

  • 24 ounces cherry tomatoes
  • 1 shallot
  • 3 cloves garlic
  • 1 pound boneless skinless chicken breasts
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 ounces feta cheese block
  • ¼ cup extra virgin olive oil
  • 8 ounces short cut pasta about 2 ½ cups
  • 1 bunch of fresh basil

Instructions

  • Chop the chicken into 1-inch pieces, slice the shallot into thin strips, and wash the tomatoes.
  • Add the tomatoes, shallot, garlic, chicken, salt, and pepper to a casserole dish. Place the block of feta in the center, then drizzle everything with olive oil.
24 ounces cherry tomatoes, 1 shallot, 3 cloves garlic, 1 pound boneless skinless chicken breasts, ¼ teaspoon salt, ¼ teaspoon black pepper, 8 ounces feta cheese, ¼ cup extra virgin olive oil
  • Bake at 400° for 45 minutes, or until the feta starts to brown and the tomatoes and chicken are cooked through.
  • Meanwhile, cook the pasta al dente according to package instructions, reserving ½ cup of the pasta water.
    8 ounces short cut pasta
  • Using a large spoon (I use a wooden spoon), smash the feta and tomatoes, then mix everything together with the chicken.
  • Stir in the cooked pasta and fresh basil, adding a splash of reserved pasta water if needed to loosen the sauce.
    1 bunch of fresh basil
  • Serve garnished with fresh basil leaves.

Notes

The moisture of this dish can vary. If your baked feta pasta seems a little dry, stir in up to ½ cup of the reserved pasta water when mixing everything together. The starchy water helps loosen the sauce and makes it extra creamy.
