Easy Funfetti Birthday Cake Mix Pancakes

Ingredients

For the pancakes

  • 1 funfetti cake mix 15.25 ounces
  • 1 ¼ cups water
  • ½ cup canola oil
  • 2 eggs

For the vanilla icing

  • 2 tablespoons butter
  • 1 cup powdered sugar sifted
  • 2 tablespoons milk
  • ½ teaspoon vanilla

Instructions

Make the vanilla icing

  • Soften the butter in a microwave safe container for about 15 seconds.
    2 tablespoons butter
  • Stir in the powdered sugar, milk and vanilla. Make this the consistency you prefer, add more milk if it is too thick and more powdered sugar if it is too thin.
    1 cup powdered sugar, 2 tablespoons milk, ½ teaspoon vanilla

Make the pancakes

  • Mix the cake mix, water, oil and eggs in a large bowl until just combined
    1 funfetti cake mix, 1 ¼ cups water, ½ cup canola oil, 2 eggs
  • Pour ⅓ cup of pancake batter onto hot griddle or nonstick skillet sprayed with cooking spray.
  • Cook over medium to medium low heat in a skillet, or 300° on an electric griddle, or until the edges start to dry out and a few bubbles form, gently flip over and cook until golden brown. These cook about 2-4 minutes per side.

Notes

Set the temperature a little lower for these pancakes. I set the temperature on my griddle to 350° when making regular homemade pancakes and set it to 300° when making cake batter pancakes.
