- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 ½ cups milk
- ¼ cup melted butter
- 2 eggs
- 1 teaspoon vanilla
- ⅔ cup chocolate chips
Whisk the flour, sugar, baking powder and salt together in a large bowl.
Add the milk, melted butter, eggs, and vanilla and stir until just combined. Fold in the chocolate chips.
Preheat a griddle to 325°F or a skillet over medium heat. Spray with nonstick cooking spray or add a little butter when hot.
Pour ¼ cup of batter onto the hot griddle, spreading the batter out a little with the measuring cup, and cook until the edges are dry and bubbles appear on the surface, about 3–4 minutes. Flip and cook the other side until golden brown, 2–3 minutes.
The batter is fairly thick. Use the measuring cup to spread it out slightly on the griddle.
Keep pancakes warm in a 200°F oven while making the remaining pancakes.
This recipe yields 15 four-inch pancakes.
