Italian Tortellini Sausage Soup

Ingredients

  • 1 tbsp olive oil
  • 1 lb bulk Italian sausage
  • 1 chopped onion
  • 1 tbsp chopped garlic
  • 1 can tomato sauce 8 oz
  • 1 tbsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/8 tsp red pepper flakes or to taste
  • 4 cups chicken broth
  • 1/4 cup heavy cream
  • 9 oz tortellini
  • 8 oz spinach
  • grated Parmesan cheese

Instructions

  • Heat olive oil in a large pot or dutch oven over medium heat, add Italian sausage and chopped onion and cook until the sausage browns, breaking up sausage as it cooks, about 5-7 minutes.

  • Add garlic and cook about 1 minute, add tomato sauce, Italian seasoning, salt, pepper and red pepper flakes stirring to combine. Stir in broth and heavy cream.

  • Add tortellini and cook about 5 minutes, add spinach and cook another 2-3 minutes, or until tortellini is tender and spinach has wilted.

  • Serve hot, topped with Parmesan cheese, if desired.

Notes

I find spinach in packages from 5 oz up to 10 oz, this particular batch you see in the photos was an 8 oz bag, you can use any amount between 5 and 10 oz. Ten ounces will be a lot, but it will work. 
I use fresh tortellini that is found in the refrigerated section, or even the deli, of most grocery stores. If using dried tortellini, that is found on the pasta aisle, it will need to cook more than twice as long as fresh or frozen.
