Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless skinless chicken breasts
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp minced garlic
  • 1 1/2 cups orzo
  • 1 can chicken broth 14.5 oz
  • 1 cup milk
  • 4 oz cream cheese half a block
  • 1/2 cup grated parmesan cheese
  • 1 lemon juice and zest

Instructions

  • Cut chicken into bite sized chunks. Cut the cream cheese into chunks.
  • Heat the oil in a large skillet over medium heat. Add the chicken pieces, season with salt and pepper and cook for 3-4 minutes, stirring occasionally, until they’re browned on all sides.
1 tbsp olive oil, 1 lb boneless skinless chicken breasts, 1/2 tsp salt, 1/4 tsp black pepper
  • Stir in the garlic and cook for about 1 minute, just until fragrant. Then add the dry orzo and cook for another 2-3 minutes, stirring constantly to lightly toast the pasta.
1 tbsp minced garlic, 1 1/2 cups orzo
  • Pour in the chicken broth and give everything a good stir. Let it cook for 7-8 minutes, stirring occasionally, until the orzo is tender and has absorbed most (if not all) of the liquid.
    1 can chicken broth
  • Reduce the heat to low and stir in the milk, cream cheese, parmesan cheese, lemon juice and zest. Cook, stirring constantly, until the cheeses are fully melted and the sauce is creamy and well combined, about 5 minutes. Serve warm, garnished with extra parmesan or fresh lemon slices if you like.
1 cup milk, 4 oz cream cheese, 1/2 cup grated parmesan cheese, 1 lemon

Notes

I usually get between 2-3 tablespoons of juice from one medium lemon.
If you end up with too much sauce (not a thing in my opinion), just let it sit for a couple of minutes and the pasta will absorb the extra sauce.
