Mississippi Mud Cake (with cake mix)

Perfectly moist Mississippi Mud Cake is topped with mini marshmallows and an easy homemade chocolate icing. This easy Mississippi Mud Cake recipe starts with a boxed chocolate cake mix that is transformed to taste homemade using a few simple tricks. Everything is mixed by hand, and the creamy chocolate frosting reminds me of the frosting on Texas Sheet Cake or Lunch Lady Brownies.

Ingredients

Cake

  • 1 chocolate cake mix
  • 4 eggs
  • 1 cup milk
  • ½ cup butter melted and cooled
  • 1 bag mini marshmallows 10 ounces
  • non-stick cooking spray

Icing

  • 3 cups powdered sugar
  • 3 tablespoons cocoa powder
  • ½ cup melted butter
  • 5 tablespoons milk
  • 1 teaspoon vanilla

Instructions

  • Preheat oven to 350° and coat a 9" X 13" pan with nonstick cooking spray.

  • In a large bowl, mix the cake mix, eggs, milk, and melted butter with a whisk or large spoon.

  • Pour the batter into the prepared pan and bake for 28-33 minutes, or until a toothpick inserted into the center comes out clean.
  • Sprinkle the marshmallows over the hot cake in an even layer. Return to the oven and bake until the marshmallows just begin to brown, about 3-5 minutes. Watch them closely so they don't burn.

  • Let cool completely. 
  • Melt the butter. Add it and the remaining frosting ingredients to a large bowl and whisk until smooth.

  • Pour the warm icing over the marshmallows and spread into an even layer with a spatula or the back of a large spoon. Cool completely so the icing can set before cutting and serving.
