This easy Mississippi Mud Cake starts with a boxed chocolate cake mix and is topped with gooey mini marshmallows and rich chocolate icing. It's an old-fashioned Southern dessert that's perfect for potlucks, holidays, and family gatherings.
Preheat oven to 350° and coat a 9" X 13" pan with nonstick cooking spray.

In a large bowl, mix the cake mix, eggs, milk, and melted butter with a whisk or large spoon.

Pour the batter into the prepared pan and bake for 28-33 minutes, or until a toothpick inserted into the center comes out clean.
Sprinkle the marshmallows over the hot cake in an even layer. Return to the oven and bake until the marshmallows just begin to brown, about 3-5 minutes. Watch them closely so they don't burn.

Let cool completely.
Melt the butter. Add it and the remaining frosting ingredients to a large bowl and whisk until smooth.

Pour the warm icing over the marshmallows and spread into an even layer with a spatula or the back of a large spoon. Cool completely so the icing can set before cutting and serving.
