Overnight Peach French Toast Casserole

Peach French Toast Casserole is a perfect make-ahead breakfast for feeding a crowd. Soft, sweet brioche gets soaked in a rich egg custard made with eggs, milk, white and brown sugar, vanilla, and cinnamon. It's then topped with juicy peaches. Let it sit overnight, and in the morning, just pop it in the oven to bake.

Ingredients

  • 10 slices day-old brioche bread
  • 8 eggs
  • 2 cup milk
  • 1 tbsp sugar
  • 1 tbsp brown sugar
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 can peaches 29 ounces

Instructions

  • Cut bread into cubes, about 1-inch in size.

  • Spray a 9" X 13" baking dish with cooking spray and spread the cubed bread into the prepared casserole dish.

  • In a large bowl, whisk together the eggs, milk, sugar, brown sugar, cinnamon, and vanilla. Pour over the bread. Drain peaches and arrange on top. Cover tightly with plastic wrap or aluminum foil and refrigerate overnight.

  • Remove pan from refrigerator about 30 minutes before baking.
  • Preheat oven to 350 degrees.
  • Bake for 40-50 minutes until eggs are set and a knife inserted into the center comes out clean.

Notes

French bread or other thick bread can be used, you will need about 12 ounces.
This puffs up during baking and will fall as it cools. 
The peaches can be cut into bite-sized pieces and be scattered on top or mixed into the casserole. 
Frozen or fresh ripe peaches can be used instead of canned, about 3 - 3 1/2 cups. 
Prep time includes 8 hours that the casserole sits in the refrigerator and the 30 minutes for it to warm up before baking.
