Peanut Butter & Jelly Baked Oatmeal

You'll love how this easy peanut butter and jelly oatmeal bake comes together in just one bowl. Plus, it's made with simple ingredients like quick oats, creamy peanut butter, sweet jelly, eggs and a little sugar. This dish is packed with whole grains making it a healthy breakfast. It heats up well in the microwave, so it's a great meal prep breakfast option.

Ingredients

  • 2 cup quick oats
  • 2 eggs
  • 1 1/2 cup milk
  • 1 cup peanut butter
  • 1/3 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup jelly

Instructions

  • Preheat oven to 350° and spray a square baking dish with non-stick cooking spray.

  • In a large bowl combine all of the ingredients, except the jam. 
    2 cup quick oats, 2 eggs, 1 1/2 cup milk, 1 cup peanut butter, 1/3 cup sugar, 1 tsp baking powder, 1/4 tsp salt, 1/2 cup jelly
  • Pour the oat mixture into prepared casserole dish, drop teaspoonfuls of jam onto the oats and swirl using a knife. 
  • Bake 30-35 minutes or until it starts to slightly brown on the edges and feels firm to the touch. 
  • Let cool 10-15 minutes before cutting. 

Notes

We serve this in a bowl because it is soft from the jelly.
