Ingredients

  • 1 pound ground beef
  • ¼ cup onion
  • ¼ cup green bell pepper
  • ¾ cup ketchup
  • 1 tablespoon mustard
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 loaf frozen garlic bread 10 ounces
  • 1 ½ cups shredded cheese

Instructions

  • Make the Sloppy Joe Mixture: Chop the onion and bell pepper. In a nonstick skillet over medium-high heat, cook the ground beef, onion, and green peppers until browned, about 6–8 minutes. Reduce to medium heat if the beef cooks too quickly. If you’re not using lean ground beef, drain any excess grease. Once browned, add ketchup, mustard, brown sugar, garlic, smoked paprika, salt, and pepper. Reduce heat to low and let simmer, stirring occasionally, for about 10 minutes to meld the flavors.
1 pound ground beef, ¼ cup onion, ¼ cup green bell pepper, ¾ cup ketchup, 1 tablespoon mustard, 1 tablespoon brown sugar, 1 teaspoon garlic, 1 teaspoon smoked paprika, ½ teaspoon salt, ¼ teaspoon pepper
  • Bake the Bread: While the sloppy joe mixture is simmering, bake the garlic bread on a rimmed baking sheet according to the package directions. Using the back of a spoon, create a shallow indentation on the top halves of the loaves.

  • Assemble and Bake: Evenly spread the meat mixture into the indentations. Top with cheese and bake until the cheese melts, about 3–5 minutes.

Notes

In a perfect world, I remember to take the loaf out of the freezer to thaw so the halves separate like a dream. In my world, I usually forget. If you’re like me and find yourself performing emergency surgery after you've pried the frozen bread apart, just gently patch up the 'battle wounds' with a little extra butter. No one will ever know.
Let the garlic bread get toasty so it doesn't get soggy. I may cook it a couple of minutes longer than specified if it's not toasty enough.
Freshly grated cheese melts best but no judgement here if you want to use pre-shredded (I do sometimes).
Use your favorite kind of cheese, cheddar is classic, but mozzarella, pepper jack, or provolone melt nicely too.
