Basil Chicken and Vegetables combines olive oil, garlic, onion, basil chicken, zucchini, broccoli and bell pepper to make a delicious and healthy dish.
2boneless skinless chicken breastscut into bite sized pieces
2cupsbroccoli florets
3cubes Pop & Cook Chopped Basil
1yellow squashcut in half and then sliced to make half moons
½red bell pepperor any color you like, sliced into thin slices about 1-1 ½ inches long
1can diced tomatoesdrained
Instructions
Heat oil in a large skillet over medium heat. Add Pop & Cook onion and garlic and cook for about a minute, add chicken and cook until no longer pink, about 5 minutes.
Add broccoli, cover and cook until desired tenderness, (about 4 minutes for tender crisp broccoli), add Pop & Cook Chopped Basil, squash, bell pepper and tomatoes, cover and cook about 4 minutes, or until vegetables are tender.
