Ingredients

  • 3 cups quick oats
  • 2 eggs
  • 1 cup milk
  • 1 cup vanilla Greek yogurt
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ½ cups fresh blackberries

Instructions

  • Preheat the oven to 350°F and spray an 8X8-inch casserole dish with nonstick cooking spray.
  • Mix all of the ingredients except the blackberries together in a large bowl. Fold in all but ¼ cup of the blackberries.
  • Transfer to the baking dish and top with the remaining blackberries.
  • Bake for 33–37 minutes or until the edges are light golden brown and a toothpick inserted into the center comes out mostly clean.
  • Let sit for about 10 minutes before serving.
