Easy Blueberry Baked Oatmeal Recipe

Ingredients

  • 2 ½ cups quick cooking oats
  • ½ cup sliced almonds plus additional
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 cups milk
  • 2 eggs
  • ¼ cup maple syrup + additional for drizzling not pancake syrup
  • ¼ cup unsweetened applesauce
  • 1 teaspoon vanilla
  • 1 ½ cups fresh blueberries divided

Instructions

  • Preheat oven to 350°. Spray an 8" X 8" pan with cooking spray.
  • In a large bowl combine oats, almonds, cinnamon, baking soda and salt. Add milk, eggs, ¼ cup maple syrup, applesauce, and vanilla and mix until combined. Stir in 1 cup blueberries. Top with remaining blueberries and a tablespoon or two almonds.
  • Bake 40-45 minutes or until edges begin to brown and a toothpick inserted into the center comes out clean.
  • Cool slightly before serving. Drizzle with additional maple syrup, if desired.

Notes

Quick oats create a softer, more cake-like texture, while old-fashioned oats give the baked oatmeal a heartier texture.
The baked oatmeal is done when the center is set and the edges are lightly golden.
Frozen blueberries can be used without thawing first.
