Easy Funfetti Cake Mix Cookies

These Funfetti cake mix cookies are soft, chewy, and made with just 3 ingredients. Using a box of Funfetti cake mix, eggs, and oil, they're ready in about 20 minutes for birthdays, parties, or an easy anytime dessert.

Ingredients

1 Funfetti cake mix 15.25 ounces
½ cup canola oil
2 eggs

Instructions

Preheat oven to 350° and line a rimmed baking sheet with parchment paper.
In a large bowl stir cake mix, eggs, and oil until combined. Dough will be oily but it bakes off just fine and you are left perfectly moist and soft cookies.
1 Funfetti cake mix, ½ cup canola oil, 2 eggs
Scoop cookie dough out using a cookie scoop or measuring tablespoon and roll into balls (the dough is easy to work with). Place balls at least 2" apart on cookie sheet. Bake 10 - 12 minutes or until cookies are set and the edges start to turn a light golden brown.
Let cool for a 2-3 minutes on the baking sheet then move to a wire rack to cool completely.
