    Funfetti Cake Mix Cookies

    You are going to love how easy these funfetti cake mix cookies are to make! Plus, you just need 3 ingredients. All you need is a box of cake mix, a couple of eggs and some oil. 

    These soft funfetti cookies are so easy to make and you can keep all of the ingredients to make them on-hand. This makes them the perfect after school snack or impromptu dessert because you can have a batch of cookies on the table in about 20 minutes!

    Why you’ll love this easy funfetti cookie recipe

    • These are probably the easiest cookies you will ever make. 
    • Uses simple ingredients you may already have, or can keep, in your pantry. 
    • Cake in cookie form – need I say more?!
    • You can have warm cookies in just a few minutes.

    Ingredient Notes

    cake mix – one standard box of funfetti cake mix. You can use Betty Crocker, Pillsbury, Duncan Hines or even the store brand cake mix. 

    oil – I use canola oil because that is what I have on-hand, vegetable oil works well too. 

    eggs – a couple of large room-temperature eggs.

    How to make this easy cookie recipe

    1. Pre-heat oven to 350° and line a rimmed baking sheet with parchment paper.
    2. In a large bowl mix cake mix, eggs, and oil until combined. Dough will be oily but it bakes off just fine and you are left with perfectly moist and soft cookies.
    3. Scoop cookie dough out using a cookie scoop or measuring tablespoon and shape dough into balls (the dough is very easy to work with). Place balls at least 2″ apart on cookie sheet. 
    4. Bake 10 – 12 minutes or until cookies are set and the edges start to turn a light golden brown. Let cool for a couple minutes on the baking sheet then move to a wire cooling rack to cool completely.

    Tips

    • I use a silicone spatula to mix the cookie dough, a large regular or wooden spoon works great too.
    • If you don’t have parchment paper you can use an ungreased cookie sheet.

    Variations

    • Can’t find a Funfetti cake mix at your grocery store? No worries, use a white cake mix and add rainbow sprinkles, maybe 1/2 – 1 cup. 
    • Want to make these for a themed party of sporting event? Just use a white cake mix and add any colorful sprinkles you want. 
    • Add about a cup of white chocolate chips to the dough. 
    • Roll cookie balls in powdered sugar or white sugar before baking for an extra special treat.
    • Top baked cookies with some frosting and extra sprinkles for a birthday party worthy cookie.

    What is the difference between cookie and cake mix?

    While cookie mix and cake mix have many of the exact same ingredients cake batter has much more liquid and cookie dough is more dense.

    Why are my cake mix cookies flat?

    For this particular cookie recipe make sure you aren’t putting the cookie balls onto a warm cookie sheet because this will cause the cookies to spread. Make sure to let the cookie sheets cool down in between batches and don’t set them on top of the hot stove while you are loading them up to bake. 

    Storage

    Store in an airtight container at room temperature for about 3 days. Just like most baked goods, these start to become dry after a few days.

    • 1 Funfetti cake mix 15.25 ounces
    • 1/2 cup canola oil
