Brrr! We have had a cold spell here in Kansas the last few days. Luckily we did not get the ice they were calling for this week. It was warm enough to stay as rain. We dodged a bullet on that one.
While at work the other day I decided that I was going to stop by Walmart on the way home and pick up everything I needed to make a warm and comforting dish for dinner. Noodles came to mind almost immediately!

Cheesy Beef Taco Noodles is such an easy and comforting dish! We use extra lean ground beef for a couple of reasons; it is better for us and we don’t have to drain it.
This is a time saver for sure. It eliminates the step of draining the ground beef and not having to wash whatever we use to drain it with. Not that we wash dishes by hand, but still.
This dish is also a winner if you are feeding kids because you can control the amount of heat it has. We use a mild salsa, but if you like it spicier, then you can use a medium or hot salsa.
We also use mild taco seasoning, but you can use a spicier version if you like. Pepper Jack cheese in place of the Monterrey Jack would also ramp up the spiciness.
How to make Cheesy Beef Taco Noodles:
Cook Light ‘n Fluffy Extra Wide Egg Noodles al dente, according to package directions. While the noodles cook add one pound of ground beef and one half cup chopped onion in large skillet over medium heat until the meat is browned, 7-10 minutes. If you are using ground beef that isn’t lean then you will need to drain it. If you are using lean ground beef (93/7 or leaner) then you do not have to drain it.
Add one teaspoon of your favorite taco seasoning and stir to combine. Next, add one can of cheese soup, one cup salsa, one half cup of milk, and one half cup of corn.
Stir in Light ‘n Fluffy Extra Wide Egg Noodles, mixing to combine well. Top with one cup of Monterrey Jack cheese, cover and allow to melt. Enjoy!

Cheesy Beef Taco Noodles
Ingredients
- 3 1/2 cups Light 'n Fluffy Extra Wide Egg Noodles
- 1 pound lean ground beef 93/7
- 1/2 cup onion
- 1 teaspoon taco seasoning
- 1 can cheese soup 10.5 ounces
- 1 cup salsa
- 1/2 cup milk
- 1/2 cup corn canned or frozen
- 1 cup shredded Monterrey Jack cheese

Instructions
- Cook Light 'n Fluffy Extra Wide Egg Noodles al dente according to package directions.
- In a large skillet over medium heat cook ground beef and onion until the ground beef is brown and the onion is translucent, about 7 - 10 minutes. Add taco seasoning and stir until combined.
- Add cheese soup, salsa, milk and corn stirring until combined. Add cooked noodles and heat through, about 3 - 5 minutes.
- Top with Monterrey Jack cheese, cover and let melt, about 2 minutes.
