These bars are often called lazy cookie bars because they require so little effort. Sometimes, you just need an easy dessert recipe and this one is perfect. Whether the kids announce they need a treat for a class party or a bake sale at the last minute, or you have guests arriving unexpectedly and want a delicious dessert, these bars have you covered. Keep the simple ingredients on hand, and you’ll always be ready to whip up a last-minute dessert with ease.

- Cake Mix: I use a boxed yellow cake mix for this version of chocolate chip cake mix cookie bars. Feel free to experiment with other flavors!
- Eggs: Room temperature eggs work best for smoother mixing, but you can use cold eggs if you’re short on time.
- Butter: I love the richness butter brings to these cookie bars. If needed, canola oil or vegetable oil are great substitutes.
- Chocolate Chips: We prefer milk chocolate chips in this recipe, but you can use virtually any flavor to suit your taste.
How to Make Yellow Cake Mix Cookie Bars
- Preheat the oven to 350° and spray a 9″ X 13″ baking pan with nonstick cooking spray.
- Melt the butter in the microwave or on the stove-top in a small saucepan over low heat.
- In a large bowl combine cake mix, eggs, and melted butter. Fold in the chocolate chips.
- Press into the prepared pan and bake for 16-19 minutes, or until the edges are golden brown.
- Cool completely before cutting and removing from the pan.
Tips
- A rubber spatula works best to mix the cookie dough and to spread it into the pan.
- Use your favorite brand of boxed cake mix for this recipe. Some brands, like Betty Crocker, come in 13.25 or 14.25-ounce packages, while others, like Pillsbury, are 15.25 ounces. All sizes will work perfectly!
Storage
Store cookie bars in an airtight container at room temperature for 3-5 days. As with all freshly baked goods these are best enjoyed within a couple of days. They will start to dry out after that.
How to Freeze Cake Mix Bars
For best results, wrap cooled bars in plastic wrap. Place them in a zip top bag. Freeze for up to 3 months.
Thaw in the refrigerator or at room temperature.
