Graham Cracker & Frosting Sandwich Cookies

Have a little leftover frosting that you don't know what to do with? These easy graham cracker cookies, sometimes called icebox cookies, are the perfect way to use it up. They are also great for after school treat.

Ingredients

  • 1 cup frosting
  • 8 graham crackers

Instructions

  • Carefully break a graham cracker sheet in half.
  • Spread a couple of tablespoons on one half of the graham cracker then top with the other half of a graham cracker.
  • Place in an airtight container in the refrigerator for at least a couple of hours. They are best soft and that takes 2-3 days.
