    Graham Cracker Sandwich Cookies

    Have a little leftover frosting that you don’t know what to do with? These easy graham cracker cookies, sometimes called icebox cookies, are the perfect way to use it up. The trick to making these is to put them in the refrigerator and let the frosting set up while the graham cracker gets soft.

    Lee likes them best on day 3. While they are good right after you make them the frosting tends to ooze out when you bite into them. They are good to eat after a couple of hours in the fridge. But on around the third day the graham cracker is soft and they are at their finest.

    I had no idea these graham cracker sandwiches existed. When we were first married I had some frosting leftover from making cupcakes and asked Lee if he wanted me to save it. He grabbed the box of graham crackers and started making these. 

    He informed me that this was one of his favorite treats as a child and I must make them any time I have frosting leftover. So now sometimes I make sure I have some extra frosting to make these.

    • Graham Cracker & Frosting Sandwich Cookies

    Ingredients

    A box of graham crackers, a tub of milk chocolate frosting and a tub of cream cheese frosting to make the recipe.

    Ingredient Notes

    graham crackers – store-bought graham crackers work perfect for this recipe to keep it simple. You can use homemade graham crackers if you want to make them.

    frosting – your favorite store bought or homemade frosting will work great. We like thick and creamy frosting for these. 

    sprinkles or jimmies – we don’t typically use these but they make a special treat for kids.

    How to make

    1. Carefully break a graham sheet in half.
    2. Spread the desired amount of frosting on half of the graham crackers, usually a couple of tablespoons, top with the other half of a graham cracker.
    3. Place in an airtight container in the refrigerator for 2-3 days until soft. We use a freezer bag, you can wrap them in plastic wrap.

    Storage

    If using frosting without milk these are safe stored at room temperature. Frosting with small amounts of milk can be kept at room temperature for up to 72 hours and kept in the fridge for up to 7 days. If using frosting with cream cheese, eggs, heavy cream, Cool Whip, or condensed milk then these should be refrigerated from the start.

    • Spread a couple of tablespoons on one half of the graham cracker then top with the other half of a graham cracker.
    • Place in an airtight container in the refrigerator for at least a couple of hours. They are best soft and that takes 2-3 days.
